I spent this past week at work finding options for new vendors to contact for future jobs. I also helped with some client contracts and paperwork for work being done on some of the properties.
On Tuesday, my Boss took Penelope and I to Lunch. We went to a traditional Indonesian restaurant called Pagi Sore. We enjoyed some grilled chicken, crispy tofu, and a spicy eggplant dish. It was fun getting to know my boss better and getting a native’s perspective on Singapore.
On Saturday we woke up early for a cooking class. We drove a little outside of the city to a more residential area where we stopped in front of this charming little house. We followed our instructor to the back patio which had been converted to an outdoor kitchen equipped for multiple groups of people. We made Laksa. Laksa is a spicy noodle soup from Southeast Asia, usually made with a rich, creamy broth that is coconut-based with a tangy kick. It’s typically filled with noodles, prawns, chicken, or tofu, and topped with fresh herbs and a boiled egg, making it a perfect balance of flavors and textures. Lauren and I were paired together and we cut and hand ground our ingredients into a paste to add to our stock before simmering and adding in the coconut milk. Then we added our rice noodles and garnishes to our bowls with the soup. We enjoyed the soup on the front porch. In the afternoon Alexa and I sat by the pool and took in some of the rare sunshine. Then Stella, Alexa and I made our way to the mall where we got matching lipsticks with our names engraved on them. Then we made our way to a sushi train restaurant where we finished the night.
On Sunday, we went to the grocery store and then sat by the pool. In the afternoon, Alexa and I went to the Gardens by the Bay. We visited the Flower Dome and Cloud Dome. We went to the flower dome first, where they had a Sakura display. There were also displays from various other locations across the world. Then we went to the cloud dome, which had different levels that represented different points in elevation and the different plant life there. It was really beautiful to see the contrast between the beautiful wildlife and city skyscape through the windows. We finished the day by enjoying the nightly light show.
