It’s already been three weeks, and time has flown by. I am almost done with my first block of classes, so I am one week away from the halfway mark of my time in Sydney. I have continued my journey to try to get a tan. I’m Irish, so it’s been strict even with the 13 UV; I haven’t burned, which is good, but I will need to lower the SPF to get some color. I went to Bondi Beach on Tuesday, and it was 97 degrees, and then it turned into a thunderstorm 30 minutes later.

It’s been the celebration of the Chinese New Year here in Sydney over the past week. Many people have been out celebrating at nighttime, and the city has been lively. A few of us went to Spice Alley, which has many authentic Asian food spots hidden in a little alley. I got dumplings, and this chicken dish from a Hong Kong spot was delicious. It was cool to see everyone embracing the celebration of the Chinese New Year, and I had a great time doing so.

I’ve been cooking a lot recently and have improved my skills rapidly. One of my favorite meals has been this chicken and rice dish. I know it sounds simple, but I add Greek yogurt and siracha with vegetables, and it is a delicious and easy meal to make. I have also been experimenting with making pancakes in the morning, and they have been working well. I am excited to see what I can make in the future.

I just completed my final project in my Financial Decision-Making class. I was given a dataset and was tasked to make a presentation based on a story I could tell with the data. My dataset was GDP by US county. I had fun digging into this dataset and finding interesting data. I discovered that the west coast had outperformed the east coast in growth due to population migration and other factors. It was an enjoyable task to be given a dataset and tell a story about it.
